Vinification: Gentle pressing and destemming of the grapes; cold maceration (1 - 3°C) for 24 hours; fermentation in stainless steel vats at controlled temperature of 16 - 17°C for 15 days.
Aging: In stainless steel vats for 3-4 months.
Total SO2: 35 mg/l.
