Pressing and destemming, then the juice stays in contact with skins at room temperature for around 24 days in concrete vats and spontaneous fermentation with indigenous yeasts.
Aging: In oak barrels for 18 months, then in bottle for 12 months.
Total SO2: 33 mg/l.
Description: Deep ruby color. Intense and complex floral and black fruit aromas. Plum and black cherry at first, then blueberry and blackberry. Hints of violet, liquorice, and earthy aromas. The flavors are the same of the aromas, with ripe medium tannins, medium body, and medium acidity.
Perfect pairing: Grilled or roasted red meat, game, medium aged cheese.
