Vinification: After the bunches are pressed and destemmed, the juice stays in contact with the skins in stainless steel tanks for at least 6 weeks. Spontaneous fermentation with native yeasts in stainless steel tanks at controlled temperature.
Aging: In French oak barriques for at least 30 months.
Total SO2: 80 mg/l.
Description: Deep ruby color. Complex fruity and spicy aroma, especially ripe sour cherries, black pepper, vanilla, and tobacco. The flavors are the same of the aromas, with full body, ripe tannins, and long finish.
Perfect pairing: Pasta with meat sauce, roasted red meat, game, medium aged cheese.
