Vinification: After the bunches are pressed and destemmed, the juice stays in contact with the skins in stainless steel tanks for almost 30 days. After that, the spontaneous fermentation with native yeasts starts in stainless steel tanks.
Aging: In French oak barriques for at least 24 months and then for 12 months in bottle.
Total SO2: 47 mg/l.
Description: Deep ruby color. Complex fruity and spicy aroma, especially ripe plum, blackberry, pepper, vanilla, and tobacco. The flavors are the same of the aromas, with full body, ripe tannins, and long finish.
Perfect pairing: Pasta with meat sauce, roasted red meat, game, medium aged cheese.
