Grape variety: Corvina (50%), Corvinone (30%), Rondinella (20%).
Terrain: Clayey, loamy, and calcareous.
Orientation: South-West ridge.
Elevation: 220 m a.s.l.
Total production: 6000 bottles/year
Vinification: Soft pressing and destemming of the grapes; fermentation at controlled temperature of 20°C for 15 days, and second fermentation on Amarone skins for 7 days.
Aging: In French oak tonneaux for 12 months, then 6 months in bottle.
Total SO2: 70 mg/l.
Description: Deep ruby color with garnet shades. Aromas of red cherries and blackberry jam, with hints of tobacco, cloves, peper, herbs, and liquorice. The flavors are the same of the aromas, with medium tannins and medium acidity.
Perfect pairing: Red meat main courses, medium aged cheese, game.
