Grape variety: Corvina (50%), Corvinone (30%), Rondinella (20%).
Terrain: Clayey, loamy, and calcareous.
Orientation: East-South-West ridge.
Elevation: 220 m a.s.l.
Total production: 4800 bottles/year
Vinification: Hand-picking in 15kg crates, natural drying of the bunches for 100 days, destemming and pressing of the grapes, fermentation at controlled temperature (16-18°) for 30-40 days, and maceration post-fermentation.
Aging: In tonneaux and large French oak barrels for 30 months, then 6 months in bottle.
Total SO2: 34 mg/l.
Description: Deep garnet color with ruby shades. Aromas of cherries soaked in alcohol, blackberries, violets, rose and licorice. Warm and mouth-filling floral, dried and ripe fruits, and spicy flavors with smooth and ripe tannins, and long finish.
Perfect pairing: Red meat main courses, aged cheese, dark chocolate.
