Grape variety: 100% Ribolla gialla.
Terrain: Marl and sandstone.
Orientation: South, West.
Elevation: 185 m a.s.l.
Total production: 4500 bottles/year.
Vinification: After the bunches are pressed and destemmed, the juice starts its fermentation in open Slavonian oak barrels for 2 months. The juice undergoes MLF in contact with the skins.
Aging: In Slavonian oak barrel for 24 months, then in stainless steel tanks for 10 months, and finally in bottle for 12 months.
Total SO2: 66 mg/l.
Description: Deep golden color. Complex herbal and balsamic aromas, with hints of candied orange peels, honey wax, and sweet spices. The flavors are the same of the aromas, with a full body and a long, fresh finish.
Perfect pairing: Spicy main dishes, foie gras, and aged cheese.
