Grape variety: Nerello Mascalese 90%, Mantiddatu, Bracau, Nerello Cappuccio, Minnella nera.
Elevation: 600 m a.s.l.
Total production: 2600 bottles/year.
Vinification: Pressing and destemming, then the juice stays in contact with skins at room temperature for 12 days in stainless steel tanks and spontaneous fermentation with indigenous yeasts.
Aging: In chestnut tonneaux for 12 months, then in bottle for 5 months.
Total SO2: 48 mg/l.
Description: Medium ruby color. Intense aromas of red fruits and spices. Hints of tobacco, leather, and flint. The flavors are the same of the aromas, with ripe medium tannins, medium body, and medium acidity.
Perfect pairing: Grilled or roasted red meat, game, medium aged cheese.
