Grape variety: 100% Nebbiolo.
Terrain: Clay marl and gray sand.
Elevation: 270 m a.s.l.
Total production: 1800 bottles/year.
Vinification: Gentle pressing and destemming of the grapes; fermentation in oak vats with indigenous yeasts, followed by 30 days of maceration with repeated pump-over of the skins at a controlled temperature of 30°C.
Aging: In French oak barrels for 30 months and then in stainless steel or concrete vats for at least 2 years.
Total SO2: 57 mg/l.
Description: Ruby color with tawny shades. Intense aromas of dried rose, liquorice, tobacco, and leather. With aging hints of tar. Dry, strong but velvety flavor, complex tannins, and long finish.
Perfect pairing: Roasted or braised red meat, game, aged cheese.
