Grape variety: 100% Nebbiolo.
Terrain: Clay marl and gray sand.
Elevation: 270 m a.s.l.
Vinification: Gentle pressing and destemming of the grapes; fermentation in oak vats with indigenous yeasts, followed by 30 days of maceration with repeated pump-over of the skins.
Aging: In French oak barrel for 3 years with the absolute minimum amount of racking. No fining nor physico-chemical stabilization before bottling. Aging in bottle for at least 12 months.
Total SO2: 35 mg/l.
Description: Ruby color with tawny shades. Intense aromas of dried rose, liquorice, tobacco, and leather. With aging hints of tar. Dry, strong but velvety flavor, complex tannins, and long finish.
Perfect pairing: Roasted or braised red meat, game, aged cheese.
