Total production: 16000 bottles/year.

Vinification: Pressing and destemming, then the juice stays in contact with skins at controlled temperature for around 10 days in stainless steel tanks. Finally, the spontaneous fermentation starts with indigenous yeasts.

Aging: In stainless steel tanks for 6 months.

Total SO2: 5 mg/l.

Description: Deep ruby color. Intense and complex fruity and herbal aromas, especially black cherry. The flavors are the same of the aromas, with ripe medium tannins, full body, and medium acidity.

Perfect pairing: Grilled or roasted red meat, game, medium aged cheese.
