A stands for "Ancestrale" (ancestral), which is the production method, but is also artisanal, authentic, ancient, audacious, and anarchic.

The ancestral method was used in ancient times, when the harvest was made later in the season and the grapes couldn't finish their fermentation because of the arrival of the winter (and, therefore, the sudden drop of the temperatures).



Grape variety: 100% Glera.

Terrain: Morenic mixture with advanced level of decarbonation.

Orientation of the rows: South-East.

Elevation: 150 m a.s.l.

Total production: 3500 bottles/year.

Vinification: Hand-picking in 15 kg crates, pressing of the whole bunches, must separation and cool fermentation with indigenous yeasts. Cooling of the wine before the complete transformation of the sugar and the aging.

Aging: Sur lie during the whole winter and then bottling without liqueur de tirage. Secondary fermentation with the residual sugar from the winter. Aged for one year in bottle.

Total SO2: 90 mg/l.

Description: Lemon color with subtle and elegant bubbles. Aromas of ripe fruit and citrus fruits hints. Balanced and harmonious flavors with crisp and creamy mousse.

Perfect pairing: Seafood starters, deep fried seafood, tropical fruit desserts.
